B\u00fct\u00fcn pulsuz bal\u0131klar lakerda yap\u0131m\u0131 i\u00e7in uygundur.<br>\u00dclkemizde palamut, torik, k\u0131l\u0131\u00e7bal\u0131klar\u0131 ve \u00f6zellikle g\u0131rg\u0131r palamudu ile yap\u0131lmas\u0131 tercih edilir. Yap\u0131lma s\u00fcrecinde tercih edilen bal\u0131\u011f\u0131n g\u00fczelce temizlenmesine \u00f6zen g\u00f6sterilir. Bal\u0131kta sinir ve kan p\u0131ht\u0131s\u0131 kalmamal\u0131, ayr\u0131ca k\u0131l\u00e7\u0131klarda \u00f6zenle temizlenmelidir. So\u011fuk veya buzlu suyla y\u0131kanmal\u0131 ve ortalama 4 parmak kal\u0131nl\u0131\u011f\u0131nda takozlar halinde kesilmelidir. Kesilen takozlar, buzlu bir suda 2-3 g\u00fcn boyunca, suyu s\u0131k s\u0131k de\u011fi\u015ftirilerek ve sabah ak\u015fam buz koyularak bekletilmelidir. Suyun so\u011fuk olmas\u0131, bal\u0131klar\u0131n bozulmamas\u0131 i\u00e7in \u00f6nemli bir fakt\u00f6rd\u00fcr. Takozlar suda bekletildikten sonra tuza yat\u0131r\u0131l\u0131r; tercih edilen tuz iri kaya tuzu olmal\u0131d\u0131r. \u0130yotlu tuz kullan\u0131lmas\u0131 halinde bal\u0131klar bozulur. Tuza yat\u0131r\u0131lan bal\u0131\u011f\u0131n bekletme s\u00fcresi t\u00fcr\u00fcne g\u00f6re belirlenir. \u00d6rne\u011fin torikse 7-8 g\u00fcn, palamutsa 4-5 g\u00fcn bekletilir. Sonunda bekletilen bu takozlar tatl\u0131 suda y\u0131kan\u0131r salamura halinde haz\u0131rlanan tuzlu suda tekrar 2 g\u00fcn bekletilir ve hem derin dondurucuya at\u0131l\u0131p hem de kavanozlara doldurulup derisinden ve kemi\u011finden ay\u0131r\u0131p ay \u00e7i\u00e7e\u011fi ya\u011f\u0131nda dolapta 3-4 ay aras\u0131 saklanabilir. Salamura halinde haz\u0131rlanacak olan lakerda, serin bir ortamda 30 g\u00fcn boyunca bekletilir. Lakerda yeterince iyi so\u011futulursa, yakla\u015f\u0131k 3 ay boyunca saklanabilir.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Yenme a\u015famas\u0131nda fazla tuzlu ise, so\u011fuk suda y\u0131kan\u0131p ar\u0131nd\u0131r\u0131l\u0131r. Tuzlama y\u00f6ntemi ile pi\u015fti\u011finden, tekrar pi\u015firmeden t\u00fcketilir. Genellikle limon, zeytinya\u011f\u0131 ve k\u0131rm\u0131z\u0131 taze so\u011fanla t\u00fcketilir.
